SUNDAY SPECIAL CHICKEN CURRY

Sunday is the best day in the week. Who would not agree? And when its Sunday, it is kind of mandatory for us to have non-veg. Yeah, but that does not mean we do not have chicken on the other days of the week, but is just that Sunday is a must to have chicken or any kind of meat. This is a simple, yet delicious chicken curry recipe which is easy to prepare and cook. I learnt this recipe from my grandmother and then I added in some twists.
In Bengali households, we generally have chicken kosha on Sundays. So, I thought of doing something else today just to have a change in taste. So, the internet being my mentor, I added a few things to my Grandmother's recipe and the end result appeared as this. Baba and Bonu were extremely pleased after having this, and what can be better than the happiness of family members.

What you need

  • 800 gm Chicken (washed and cleaned)

  • 1/2 cup Yogurt
  • 1/2 cup Tomato Puree
  • 1 tbsp Ginger- Garlic Paste
  • 1 tsp Turmeric Powder
  • 1 tsp Cumin Powder
  • 2 tsp Coriander Powder
  • 2 tsp Kashmiri Mirch Powder (You may even add more)
  • Salt as per taste
For the curry:
  • 1" Cinnamon Stick
  • 4-5 Cardamom Pods
  • 2-3 Cloves
  • 2 Bay Leaves
  • 1 Green Chili Chopped (You may add more if you like it spicy)
  • 4 Onions (made into a paste)
  • 1 Tomato (chopped)
  • 1 tsp Garam Masala Powder
  • 1 Tbsp Fresh Cream (optional)
  • Coriander Sprigs for garnishing
  • 2 tsp ghee
  • Oil as required

How to make it?

Marination:

  • Make a paste of all the ingredients written under the marinade section.
  • Put the chicken pieces inside the marinade and keep it for at least two hours.

Frying the chicken:

  • After two hours, take out the chicken and drain the excess marinade. Do not throw the marinade away as you would need it in the gravy.
  • Heat oil and ghee in a pan.
  • Fry the chicken pieces until it turns golden brown.
  • Take it out and remove the excess oil from it using a tissue paper.
Making the curry:

  • In another pan, take 1 tablespoon oil and heat it.
  • Add in bay leaves and other whole spices ( cardamom, cinnamon and cloves)
  • When it starts releasing the fragrance, add in green chili and the onion paste.
  • Fry the onion paste till it turns a little brownish.
  • Add the chopped tomatoes and fry for 2 more minutes.
  • Now, add in hot water, chicken pieces and garam masala to the curry.
  • Mix it properly, cover it and let it simmer till the chicken is cooked thoroughly.
  • After around 10-15 minutes, your curry will be ready and you need to mix in the cream to the mixture.
  • Serve it and garnish with Coriander Sprigs.
Sunday Special Chicken Curry

P.S:

  • You may pair this Sunday Special Chicken Curry up with Normal Rice, or Ghee Rice or even with Peas Pulao.
  • You may also skip the step of adding cream in the gravy. I use it just to thicken it up a bit and have a creamy texture.
  • Not only for garnishing, you may add chopped coriander in your dish also.
