MANGOES!!! I just cannot stop obsessing over it. If I start again how much I love mangoes, I would not be able to stop. "You can't buy happiness, but you can buy cupcakes. That is pretty much the same thing." Cupcakes, whether you buy them or bake them, are LOVE!! Who does not love cupcakes, right? They are so adorable and cute. 
These Mango cupcakes are egg-less, yet so soft and moist. It melts in your mouth and that frosting on top makes it super awesome. You can anyway have it without the frosting, but a few minutes of extra work makes it more delicious. 


Makes 6-8 muffins
Preparation Time: 20 minutes
Baking Time: 20-25 minutes

What you need

For the cupcake,
  • 1 cup All Purpose Flour
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Cardamom Powder
  • A pinch of Salt
  • 1 cup Mango Puree
  • 1/2 cup Castor Sugar (you may use more as per requirement)
  • 1/2 cup Vegetable Oil
  • 1/2 cup Yogurt
  • 1/2 cup Milk

For the frosting,
  • 1 cup Whipped Cream
  • 4 Tbsp Mango Puree ( Half for the frosting, half for the filling)
  • 1 Tbsp Icing Sugar

How to make it?

For the cupcakes,
  • Preheat the oven at 180 degree Celsius.
  • In a bowl, sieve together all the dry ingredients( All purpose flour, baking powder, baking soda, salt and cardamom powder). 
  • In another bowl, take the mango puree and add the castor sugar to it. Beat it till its creamy and thick. 
  • Add in the vegetable oil and beat the batter again. 
  • Then add the yogurt and milk and blend it again properly till all the wet ingredients are properly combined. 
  • Now add all the dry ingredients to the wet ingredients gradually. Fold it well using a spatula.
  • Now line the cupcake molds with butter and flour, or use silicon molds. 
  • Pour the batter in the molds and bake it in the preheated oven for 20-25 minutes. 
  • Once they are baked, insert a toothpick to check their whether it is properly baked or not. Allow them to cool for a while before you put the frosting on top of it.

For the frosting, 
  • Beat the cream in a bowl till it has stiff peaks. 
  • Add half the mango puree to it and beat it again. 
  • Add the sugar gradually and beat till it has the perfect consistency. 
Assembling the cupcakes,
  • Core the cupcakes to put the mango puree filling in it. 

  • Then, insert the frosting on a piping bag and decorate the cupcakes with it.
